Lowfat Oven Fried Pringles Chicken

This is my recipe so I am not sure of the fat and calories but it is really low fat and yummy! Even the kids LOVE it!!!

Ingredients:

6 Boneless Skinless Chicken Breasts
1 Can of Fat Free Sour Cream and Onion Pringles.
3/4 Cup of egg beaters
1/4 TS Salt
1/4 TS Black Pepper
13x9 Glass Pyrex pan

Instructions:

Preheat oven to 400 degrees.
Wash chicken and set aside. Spray the baking dish with cooking spray. In a large zip lock bag pour half of the Pringles. Crunch the pringles until they are very small. In a bowl big enough for the chicken breasts pour the egg beaters, salt and pepper (*If you like your chicken spicy add a little cayenne pepper). Dip the chicken into the egg beaters, next put the chicken into the zip lock bag and shake. Place the chicken into your glass baking dish. Repeat for all 6 breasts. If you need more pringles just add more to the bag and crunch. When you are finished with all six breasts bake at 400 degrees for around 20-25 minutes. Check the chicken by slicing the largest breast down the middle to see if it is done.

I usually top with Pioneer Fat Free country white gravy! Yummmmy!

Michael Jackson

I can't let the day go by without saying something about Michael and his children. First and foremost in his life he was a Dad. He loved his kids and is kids loved him dearly. It was at the memorial service today we saw that love and bond from his middle child Paris. My heart breaks for them. Yes, they have lived in a bubble and have been sheltered from the world and the paparazzi for their entire lives. (Yes, their dad is weird and dangled Blanket out of the hotel window.) But, you know he loved them more than anything in the world. Can you imagine how much courage it took for them to go to the service today being viewed by the world. Knowing how much it would change their lives forever, never having anonymity again. It would have to be terrifying.
We will never know about Michael's innocence or guilt but to his family he will always be innocent. He will always be their son, brother, nephew and Dad! They will always love him unconditionally and that is the way it should be.
I will never know if he is innocent or guilty. However, I do celebrate his music and the legacy he will leave on our world forever!
I pray that the children and the family find comfort in the overwhelming outpouring of love that the world felt for Michael today.

Barack Obama joins the Hall of Presidents at Disney's Magic Kingdom.

A remarkably lifelike Audio-Animatronics figure of President Barack Obama enters the spotlight in a revised and refreshed Hall of Presidents show when it reopens July 4 in Magic Kingdom at Walt Disney World Resort. The addition of the countrys 44th chief executive is just part of the most significant update to this classic attraction since its 1971 debut in the parks Liberty Square.

Pulitzer-Prize-winning historian Doris Kearns Goodwin helped develop the show with Disney Imagineers. In this video they talk about the Hall of Presidents: A Celebration of Libertys Leaders.

Hot Spinach-Artichoke Dip (Lowfat)

Hot Spinach-Artichoke Dip

Ingredients

1 cup(s) onion(s), finely chopped

2 medium garlic clove(s), minced

10 oz chopped frozen spinach, thawed, drained and squeezed dry

8 oz canned water chestnuts, sliced, drained and coarsely chopped

14 oz canned artichoke hearts, without oil, quartered, drained and coarsely chopped

8 oz 1/3 less-fat cream cheese, softened

8 oz reduced-fat sour cream

1 cup(s) low-fat shredded cheddar cheese, divided

1 tsp hot pepper sauce

1/2 tsp table salt

1/4 tsp black pepper

1 spray(s) cooking spray

Instructions

• Preheat oven to 350°F.
  
  
• Melt butter in a large nonstick skillet over medium heat. Add onion and garlic; sauté 5 minutes or until tender. Add spinach, water chestnuts, and artichokes; sauté 2 minutes. Add cream cheese, sour cream, 1⁄2 cup of Cheddar cheese, hot sauce, salt and pepper.
  
  
• Spoon into an 11 x 7-inch baking dish coated with cooking spray. Top with remaining 1⁄2 cup of Cheddar cheese. Bake at 350°F for 18 to 20 minutes or until thoroughly heated. Serve with baked tortilla chips (need to count POINTS values for chips). Yields about 1/4 cup of dip per serving.

Yummy Lowfat Frozen Strawberry Layer Cake!!

Frozen Strawberry Layer Cake

Ingredients

1/2 cup(s) sugar

2 tbsp fresh lemon juice

1/2 tsp table salt

12 oz store bought angel food cake, cut into 1/4-inch slices

4 cup(s) fat-free vanilla frozen yogurt

Instructions

• To make strawberry sauce, combine strawberries, sugar, lemon juice and salt in a saucepan, stirring over medium heat until the sugar melts and the liquid comes to a simmer. Simmer 15 minutes. Use the back of a wooden spoon to mash about half the berries against the side of the pan. Cool to room temperature and use immediately or refrigerate, covered, up to 2 days.
  
  
• Spoon the frozen yogurt into a large bowl and mash it with the back of a wooden spoon until soft and spreadable.
  
  
• Line the bottom of a 9-inch round springform pan with one third of the cake slices, cutting any slices to fit the shape of the pan. Top with half the frozen yogurt, spreading it to the sides. Spread 2/3 cup strawberry sauce over the frozen yogurt, then top with half the remaining cake slices, again cutting any to fit. Spread the remainder of the frozen yogurt over the cake, top with 2/3 cup strawberry sauce, and finally seal the top with the remaining cake slices. Cover with plastic wrap and freeze at least 6 hours or up to 3 days. Let the cake stand at room temperature 10 minutes before unmolding. Slice into 12 pieces and serve. Yields 1 piece per serving.
